You do realize that a meat probe in a peice of meat when you put it on and will take at least 10 hours to cook is like watching paint dry or grass grow.... right
Actually, you could actually do 3 or 4 coats of latex paint in that amount of time. Just no need to watch it dry.... A simple look at the clock will tell the tale.
As for pit temp, I can run the UDS @ 150 for 6 to 8 hours without a look for some awesome peperoni sticks. YMMV

Just poking fun...I do enjoy your postings by the way.
We all do/say things which other people think are "different".
And I'd be one happy camper to maintain 150° and walk away from the UDS the same way as with temps in the 200's. _________________ Since Christ DIED for us, we should LIVE for Him!
To make the ° temperature symbol, hold the Alt key while typing 248 on keypad.

Really you can't hold 150 in your UDS? I do it all the time....well come to think of it that was in the winter and/or cool weather. I did walk by the drum a few times last weekend in the sun and the thermo was at 100.
Now you got me thinking that it might be a little harder in the summer temps. _________________ “Franken Smoker”
