Is it a "must have" item ?? Here in the South 'Tater Salad is KING to some folks, but is it a "MUST HAVE" item while vending BBQ / Ribs / Chicken Question
Beans and slaw are easy enough to prepare, and are big favorites......will a bag of chips suffice, instead of 'Tater Salad Question

I'm fixing to purchase a Vending Rig from a friend of mine and he has told me that he's had some folks tell him that if he didn't have 'Tater Salad on the plate that they wouldn't come back.
I also know the NIGHTMARE of trying to prepare large quantities of 'TS.

People who say that they wont come back unless you have tater salad, must not like barbecue that much. If they like barbecue, and your barbecue is good...they'll come back.

I agree... PS takes way too much time and effort to make right and not worth the hassle for vending. We only offer it for catering gigs.

Sam's has good potato salad, 4 bucks and change for 5lbs. It's a very popular item for me whether vending or catering...

We don't serve it while vending either...instead we use chips, has not been a real issue. For catering, that's a different story...because then you are guaranteed a certain amount of money.

Just my 2 cents ....not a vendor mind you but i am from the south. Tater Salad is a big deal but i would never consider serving that store bought generic stuff from the warehouse stores. It also takes a while to make great baked beans do you comprimise here as well? I just come from the school that homemade IS worth the effort and i really think your customers will know the difference. Running a food business is ALOT of work and if youare not willing to put in the extra effort to do things from scratch perhaps you should find another line of work . Pkerchef

When vending, you need to think 'walking/standing' to eat food. Plated is not conducive to this, as there is rarely a place to set and eat.

If you do want to serve potatoe salad, I don't see a problem with using the 'generic stuff'. Find one you like, add some spices to taste, and make it your 'own'.

Making dishes like PS and baked beans from scratch is admirable, but it can be impractical too. 'Make it from scratch or get out of the business' is a tired old arguement. Do the people that feel this way make and bake their own buns for sammies? If not, what's the difference?
