dfess1 Here is a great brew that is ready quick. Supposed to be a wit but turns out a little darker. I have done a few batch of this one. Give it 3 weeks from the day you pitch the yeast before you bottle it. It will be ready to drink when carbed.
1 hour 3 gallon boil
1 can coopers wheat malt extract
1 can coopers light malt extract
1oz hersbrucker 45 min
1oz hersbrucker 15 min
1oz sweet orange peel 15 min
1/4 oz coriander 15 min
1 pack of Safbrew S-33
Add extracts once at full boil, bring back to boil then add first oz of hops, boil 45 min, add flavoring hops + orange peel + coriander boil for last 15 minutes _________________ "if you cant cook it in bacon grease it ain't worth eating"

toga,
put in a little star anise with the corandier and orange peel, and that's my recipe!
Got the second batch of pale ale brewed (first time I've done back to back same recipe. Well, first time I've done the same recipe at all!). Good thing is I managed to hit the same OG reading!. Racked the first batch after a little over a week, and dry hopped with one more oz of Citra. In two weeks I'm going to transfer it from the secondary straight to the keg. Next week I'll rack the second batch to the secondary, and brew a hefe. _________________ Brinkman SnP - with mods

Here's a shot of our 3 beers at the moment, in the cool crawl space area. The one in the front is the fermenting Pale Ale from Tuesday night. The middle one is the First pale ale, in the secondary. And the far one is the ESB in the secondary. This coming Tuesday, I plan to keg the ESB, rack the second pale ale into the secondary, and brew a hefewiezen.

So I kegged the ESB and the Pale Ale on Sunday. Kinda ran out of gas halfway through, so I'm getting that refilled tonight. But once that pale gets fully carbonated, holy hell it's going to be awesome. It's fantastic half flat!! The ESB, well it's "ehh". Hoping that getting fully carbonated will help.
We did brew a hefe last night, and have another Pale in the secondary. And I'm pretty sure I'm going to brew yet a third batch of that pale tonight. I think this is going to be the go to summer beer. _________________ Brinkman SnP - with mods

Sweet!! Perhaps the ESB will need a little more time to clean up. Be sure to post up pics when you tap the kegs. I'm going to crack open a bottle of the whit I bottled 3 weeks ago today. I'll post up a pic if I can find my camera. The hefe that was brewed tuesday night blew the airlock sometime last night. The hefe is on the right (in case you couldn't tell which one blew up!), the Pale that was brewed last night is on the left. Sorry for the crappy picture, my phone's camera doesn't like low light.
Here are the ESB and the first Pale Ale on Tap. They've been on pressure up to 30psi for the last two days. Will bring them back down to 12 or so this evening. Hopefully the ESB is carbed, because I need to pull some off for our Homebrew Competition tonight.
And here's a shot of the overall bar area. Still need to build the shelving that will go in the skinny cabinets. These will essentially be three mini wine racks. In between them is the liquor and glassware. One side is nothing but scotch and bourbon. The other side is everything else! Oh, and I'll need to build a bar at some point. The dark one that is there now was a donation from my MIL, who wanted it out of her house, must to my FIL's dismay.
And if you're interested in the Pale Ale recipe, it's pretty damn tasty (and easy since I do extract/partials).
1/2 lb 30L Crystal Malt
1/2 lb Carapils
6 lbs Extra Light DME
4 oz Citra Hops
1 oz Nugget Hops
Wyeast American Ale Yeast II
1. Steep the grain in a gallon of water @ 150 degrees for 45 min.
2. Sparge into your brew kettle. Add 1 1/2 gallons of water, and DME. Bring to a boil.
3. Add Nugget hops and boil for 60 min.
4. @ 20min to go, add 1 oz Citra.
5. @ 15 to go, add 1 tsp Irish Moss
6. @ 10 to go, add 1 oz Citra.
7. @ 5 to go, add 1 oz Citra.
8. Cool to 68 (at least) and pitch yeast.
9. Rack into secondary and add 1 oz Citra.
10. Sit on it for 2-3 weeks, bottle/keg. _________________ Brinkman SnP - with mods

I would rig a blow off tube for that heffe. That is some heavy duty krausen Looking good so far!
I'll have to give the pale a try this fall when I have a little more control over temps in my beer closet. _________________ "if you cant cook it in bacon grease it ain't worth eating"

Wow! That's a really cool looking bar you've got going there, dfess1! Very impressive indeed! And the brews look good, too!
I just bottled up what I think are the last two brews before my summer shutdown - that is, unless I score a second beer 'fridge before the Fall - a monster IPA (OG was 1.092 and should break 100 IBUs!) and a fairly hefty Stout.
Those follow four recent brews that are coming into their own: a previous batch of Stout, a Pale Ale, a Nut Brown Ale and a Red Ale.
All but the Nut Brown Ale are excellent! I'm a bit disappointed with the Nut Brown, the flavor isn't as bold as I was hoping for. I'll adjust the recipe next time, but it's still enjoyable.
With all the brews I've done so far this year I had to do some mods on my beer 'fridge to expand capacity! Pulled out the bottom fruit and veggie drawers and the shelf they slid under, whipped up a new, much lower bottom shelf, then lowered the top two - and added props to keep the shelves from sagging under the weight! Voila - three levels of bottles!
17 cubic feet of beer! Or something like that I've got eight cases in there now - without using the door shelves! With another four cases bottled and looking for space in there soon, I have some drinking to do!

thanks for the compliments guys. The ESB took 2nd place in our homebrew comp. I think had it sat for a touch longer, it would have been even better (well it is sitting longer, but too late for the comp). Got my "Hop Monster IPA" and another batch of Stout fermented, carbed and safely in the 'fridge before this gawdawful heat wave showed up, and the 'fridge is more packed than ever - I'm taking over the door, too! Yay!
For the record, today the 'fridge has my last Dopplebock, a few Weizenbiers and Blonde Ales, a dozen Octoberfests, plenty of Red Ale and Nut Brown Ale, almost two cases each of Pale Ale, IPA and Stout, and a case of Honey Porter. I think I should be good for a little while
Tried the first bottle of the Honey Porter I brewed back in early May and I'm very happy with it - fits the style nicely indeed. I wish I had done a back-lit shot because the color is amazing.
Anyway, unless CL drops me another great deal on a second beer 'fridge, I'm done until the Fall brings my cellar temperature back down below 70°F!

now that is a packed fridge! That honey porter looks fantastic. Beautiful head!
I look around my place right now, and if I didn't know me, I'd say this house had at least one alcoholic living in it. A kegerator with two cornie's in it, tapped. two more in the cellar already carbed, waiting to go on, and a beer in a secondary. Next to the kegerator is a same sized wine fridge, filled with just white wine. Above that are two cabiets, one devoted to scotch and bourbon, the other is all the other liqours. Both cabinets about to be flanked with red wine bottles, that are currently on another wine rack. Then you head out to the garage where our second fridge is. The "side by side", has the top two shelves currently consumed with ribs for this weekends party, but the 2 shelves and 2 crispers, as well as the entire door, are chock full of random comercials! Good thing we're having this party this weekend, clean out my reserves!! _________________ Brinkman SnP - with mods

When it comes to brewing one's own beer, I commend anyone who's simply WILLING to get messy and do so. I tried to do it one time and it was a total disaster. While I let it ferment for about a week in the bottles, the beer turned out really skunk-y. I mean, it wasn't the WORST beer I had ever drank (look at Corona - lol), but it certainly wasn't anything to be excited about.
It also didn't help that I put the beer in glass bottles and a few of them broke in my closet. With that said, things DID get messy.  _________________ BBQ ain't no junk food! |

Since were talkin home brew on a BBQ forum. Heres a shot of my Amber Ale while the chicken thighs get happy on the UDS. Brewed from all grain and kegged- force carbed. Its a real malty Amber almost similar to an Octoberfest with an ale profile. Nothin like sittin by the smoker with a homebrew.  _________________ Gotta love those tasty carcinogens. |
