Wondering if any of you guys have tried smoking scallops in bacon. Was thinking of using apple wood and having it as an appetizer while I had the smoker going. Any methods or recipes?

Actually I did some wrapped in bacon yesterday. They came out
really good.

I didn't use any seasoning, I just wrapped them in a half strip of bacon and cookd them as I was cooking Shrimp Diablos (ABTS w/Shrimp). Came out excellent, just make sure to watch them because they will dry out on you.

I've smoked bacon-wrapped scallops in my Big Green Egg. Just added a little fresh black pepper to the surface (salt not needed b/c of bacon), skewered them with a toothpick, placed on rack over a cast iron fry pan for indirect heat. I used alder wood chips for mild flavor. I smoked them for about 35-40 minutes at 220. Yummy!

I did some of these a few couple weeks ago. Popped a brisket in for dinner and threw the scallops in for lunch at the same time.

Fresh cracked pepper and a dash of ancho powder was the only seasoning I used. 45 - 60 min at 225* was about right. The scallops were amazingly sweet and delicately smoked (cherry and mesquite)

I will definitely be making them again!

I found that bacon needs to be cooked a lot longer then the scallops so next time I try them again I will either:
- use really thin bacon
- smoke the strips of bacon 45 minutes and then prep the scallops
- fry the bacon halfway then prep the scallops

Or do them under a broiler or some other form of high heat.

Without doubt bacon wrapped Scallops are my favorite appetizer.
You must pre cook the bacon 1/2 way then wrap the Scallops to finish.
