I'm using my new Smoky Mountain gas smoker and I'm having trouble getting smoke. I'm using regular wood chips and also tried the chunks. I soaked them for about 20 minutes in water. I tried soaking longer, soaking less, vents open, vents closed.

It was smoking pretty good Friday night when I lit it off for the first tome to season it.

Any suggestions?

Don't worry about visible smoke.

Clean burn with very little smoke visible will produce better product than heavy looking smoke.

So don't worry about the soaking, you can use the chips in a foil pouch, with a single hole in the pouch. You may not even see any smoke, you need the nitrites and the nitrates from the smoke and you need as clean a burn and not a smolder.

Yep what SoEzzy said..

In this picture My cooker is running at 225 and You have to look real close to see the smoke..



Sometimes all I can see is the heat signature coming from the stack..The smoke flavor on this clean of a fire is perfect.

Thanks for the quick reponses. I understand i don't need a lot, I just had none, you coldn't even smell smoke. I tok the cover off the wood vbox and now it seems to be better. I have two butts on there that are looking really good. Should be done in about an hour.
