I have two pork butts and a brisket to smoke for a friend of mine but I have to smoke them a week before his son's graduation party. I was just wondering if anyone has any ideas on wether to freeze the cooked meat for a week or just refrigerate. I've never smoked meat a week before serving it. Any ideas?

Given that schedule, that's just too long sitting in the 'fridge, imo. I'd definitely cool the meat down as quickly as possible and then freeze the meat, preferably with vacuum-sealed bags. Freeze any collected juices, too - I'd put that in a separate bag...

I'm not a fan of this unless it's only me eating the final product. I'd find a way to at least do a cook later in the week and just fridge
