I know not everyone sells sliders, but if you did, how much pulled pork would you serve on a 3 inch bun?

The rule of thumb I've heard is 1oz. of meat per 1" of bun.

If it was me, the next time I did pulled pork, I would build a sandwich on the bun in question then weigh it out.
