I would still suggest a rack inside the pan....you are rendering out a lot of the fat in slow cooking. The last thing you want is a greazzy butt! _________________ BBQ is like sex...
Even when its bad its still pretty good!
...besides, when is the last time you turned down BBQ?

YES! After about 8hrs mix some of those drippings with your favorite BBQ sauce and baste with it. It only gets greasy on the bottom but I think that's the best eating but my cardiologist doesn't recommend it. _________________ D. Tillery
