Hey guys, So I liked my UDS so much I've decided to make a smaller one to take camping and so on.. I found a small grill for $2 (new never assembled) similar to the smokey joe (silver?) and am hoping to use some parts from that.

A few Questions:

1) 1 rack or 2? have you had success with 2 racks or is there not enough space closer (shorter barrel) to the coals

2) For those of you who use a water pan where is the best placement? right above coals? right below bottom grate?

I am currently working on a similar project.

I picked up a Smokey Joe Silver and the lid fits perfectly.
I am going with 3 grate levels.
The lowest one being about a ΒΌ" above the second ring.
I do want to put a water pan/diffuser in as well.
I will most likely use this as a cold smoker.
Never done cold smoking before, but how hard can it be? Confused Wink

tshoudel,
Check to see what size that grill is. I have seen some cheap grills at Wal Mart and also Home Depot that are both smaller than the Smokey Joe by about an inch in diameter. If that is the case, you will have a hard time finding the grills needed to make this.

I do recommend 2 racks as it gives you more flexibility in what you can cook as well as simply more space when doing smaller items.
