I'm looking for a distinct type of brisket marinade.
there is a local BBQ place in L.A. called DR. Hoggly Woggly's that is my favorite brisket ever. They're sauce has a very beefy/peppery type tast. Black pepper.
I was wondering if anyone has a marinade with Onion soup and maybe brown gravy that I can pepper up.
I'll experiment with my own, just hoping someone has a good base for me to work with.

Here is a couple:
Onion soup mix
Pepper to taste
(you got to admit, you walked into that one)

I use the Au Jus Mix from Spice Barn. Doctor it up with my favorite spices and use it for a mop.
