I can't help but think of that stupid song from the 70's, "Disco Duck". Chicken fajitas are a favorite at my house and yours looks mighty tasty and with the correct sides. Surprised I don't see a spark plug or 7018 in there though.

The ingredients:


Put the rub together:


Make the brine (boiled just long enough for the kosher salt/brown sugar to fully dissolve):


Rip the spine out to prepare for splitting. Also makes it easier to remove the rib bones:


Fully split, ready for rib bone removal:


Into the brine:


Next morning, out of the brine, patted dry with paper towel, ready for the rub:


Rub on the insides, then a light dusting of Bacon Salt:


Rub under the skin, so the flavor can get into the meat, not just on the skin:


Then more rub on the outside, and a light drizzle of olive oil:


On to the smoker after it's warmed up and smoking lightly with apple wood:


Plated for serving with calico baked beans:


And this would be me, completely missing the idea behind "game face"... Ok, my wife doesn't like to touch my camera cuz it's got way too many controls, and self portraits are hard, so you get the last one I did, not a fresh one for this...

Lol.....I cut the lemon in half, loosened up the skin on the breast, rubbed the meat with the lemon and left the halves under the skin...hence - MOMMA chicken. Here it is boys.

American West Hearty Dutch Oven Chicken & Dumpings

One cut up, deboned, whole fryer, cut into bite sized pieces.
Five very large taters.
About a pound of carrots.
Mushrooms.
A couple jalapenos, diced whole.
One can of corn.
One can of pees.
Seasoned to taste with oregano, basil, and S & P.

Toped off with some thick, fluffy dumplings / biscuits.

On the fire.




Dumplins on.






Ready to eat.
