I guess they can't hear the vegetables scream, then?  
The idea of the lightly-smoked spaghetti squash sounds good to me. Ironically, my wife oven-baked one just last night to go with some grilled chicken. She made up a light chunky tomato not-quite-a-sauce with some fresh herbs from the garden to pour over it and I have to say it was the best I've had (and she's been cooking those for decades).
But....it wouldn't surprise me to hear later that the vegans won't eat anything cooked in a rig that has/had meat in it 
If it was me dealing with them, I'd just make up a super-salad and call it a day. If I was religious, I'd be thanking my own personal Big Hairy Thunderer In The Sky that I don't know a single veggie-head of any degree
