I have some vegitarian neighbors comming over soon (No..not tree huggers, they are from India) I would love to BBQ for them and since my BGE is a lot like a traditional tandoori I thought I would use this. Does anyone have any good ideas on what to serve? BBQ + Vegitarian = interesting problem. (P.S. I would love to eat the stuff too so It cant taste like a bale of hay!)

lol good luck are you sure they are vegitarian or do they just not eat beef and pork i have cooked for some folks form india and chicken was ok and so was fish

Strict Vegitarians...Dairy is ok...eggs not ok

Hehe...I know its a tricky one but I'm determined to help the meatless see what they are missing without violating thier religious beliefs.

How 'bout some ABT's with shroom instead of sausage? Suffed mushrooms are always good. You can stuff an eggplant with carmalized onions, garlic, some of the eggplant sauteed and mixed with tomato paste and smoke that. I have made that before but not in a smoker, top it with some reggiano at the end. Maybe stuff some bells with rice or orzo and feta and basil, garlic, etc. Cheese, spinach, quesadillas? They are good on a smoker. Makin myself hungry. Time for lunch!

Ok. Get a spaghetti squash. It is somewhat large (football sized) yellow, and looks kind of like a pumpkin. Cut it in half, remove the seeds. Put it rhind side up on the smoker, flip it after close to an hour. Then you will start seeing some color. Put a little (and i mean a little) brown sugar, and some butter (if they are hard core you may have to use a vegan butter not made from dairy) close the smoker up. Check on it a little later and when you can basically pull the inside (like a butt) its done. It will look like spaghetti (hence the name) and be about the same texture and consistency. They will dig it, and so will you! Good luck!

Portabello's are always good. I made some pizza-ettes sort of thing.

I smoked for a bit, then grilled.


olive oil, garlic, looks like fresh basil, chopped tomatoes and cheese on it. I would use less cheese next time.













Veggie kabobs are good. Alien once had some veggie burgers in the recipe page, don't use the onion soup mix from his recipe and you are set. you can make your own with veggie stock if you have some time.

Sorry, I feel your pain. I have some vegan friends and I know what you are up against but as far as tofu---dry it and use it for fuel. good luck.

Smoked corn is amazingly good just toss on the smoker in the husk and cook.

Grilled squash and zucchini is a favorite at my house just slice them in half long ways and grill away.

You don't have to do anything crazy, just have fresh vegetables and serve rice and or beans with it. Hell down south here if you toss in some corn bread and fried okra you got yourself a Sunday lunch.

Grilled potabella mushroons like mentioned above are Our favorites..Brush with EVOO and hit with some fresh chopped garlic and a little salt and pepper..As good as a steak..Better with a steak.. Laughing

What all of them said^^^^^^. Get some beans(dry or canned) and make veggie baked beans. Make up a good rub and bbq them portabellas.
Take zuchinni, yellow squash, onion, egg plant, etc season with curry and saute in a cast iron pan. Throw the tofu in the trash. Roast some peppers(both hot & sweet) and stuff them with some of jeepdads chipotle humas.
Don't know where you are located at, but if you can get fresh sweet corn, pull back the husk, remove the silks, brush with a little evoo, sprinkle some good creole seasoning, tie the husk back up, then roast 'em on the grill. Now if you really want to shock the Indian neighbors, invite a few of us good ole ringers over and they will be soooo glad that you are the neighbor and not us, they might throw a dinner party in your honor.

Mushrooms have been mentioned... the perfect way to embellish Mushrooms... Baconized Mushroom. Soak mushrooms with Olive Oil, liberally salt {Sea or Kosher}... soak for about 20 minutes to allow the mushroom to soak up as much oil as it can., Grill, sizzle, saute, smoke or whatever. Oily-Greasy Goodness + Salt = Bacon Flavor. A dash of Turbinado or Maple sugar may complete the illusion.



Its not just a novelty replacement, 'Baconized Mushroom' stands on its own, as its own tasty thing. Wink And it contains something YOU are more likely to eat than tofu... The Mushroom part.

The Baconized Mushroom wrapped ABT like thing.... the oiled & salted portabello slice needs to cook for a while in the smoker, about 20 minutes until it becomes flexible. THEN you can wrap a few ABTs with it. Once its pulled out the cooker, it does crisp up a little bit.

Its a tastier experiment than some. If your cooking some tradition BBQ meat the same day, you have plenty of time to experiment with Baconized Mushroom early in the cook, or indeed a day or two before.

You also could have smoked some veggies, namely eggplant and made a Baba Ganoush. Here is a recipe I found online:

Sometimes I add a pinch of ground cumin. If you do, please just add just a bit. Baba Ganoush shouldn't taste predominantly of cumin, which can quickly overwhelm.


3 medium-sized eggplants
1/2 cup (130g) tahini (roasted sesame paste)
1 1/4 teaspoons coarse salt
3 tablespoons freshly-squeezed lemon juice
3 cloves garlic, peeled and smashed
1/8 teaspoon chile powder
1 tablespoon olive oil
a half bunch picked flat-leaf parsley or cilantro leaves


1. Preheat the oven to 375F (190C).


2. Prick each eggplant a few times, then char the outside of the eggplants by placing them directly on the flame of a gas burner and as the skin chars, turn them until the eggplants are uniformly-charred on the outside. (If you don't have a gas stove, you can char them under the broiler. If not, skip to the next step.)


3. Place the eggplants on a baking sheet and roast in the oven for 20 to 30 minutes, until they're completely soft; you should be able to easily poke a paring knife into them and meet no resistance.

**I am sure you do this on the smoker at about 250 for a couple of hours and have wonderful smokey flavor to the eggplant****

4. Remove from oven and let cool.


5. Split the eggplant and scrape out the pulp. Puree the pulp in a blender or food processor with the other ingredients until smooth.


6. Taste, and season with additional salt and lemon juice, if necessary. Chill for a few hours before serving. Serve with crackers, sliced baguette, or toasted pita chips.


Storage: Baba Ganoush can be made and refrigerated for up to five days prior to serving.

I do Portabella mushrooms a couple of different ways:
I give them a light dose of Lodestar Farms (www.lodestarfarms.com) extra virgin olive oil (EVOO) that is lemon infused and dust them with lemon pepper and smoke. I garnish the top with citrus and serve
or
I coat them with Lodestar Farms garlic infused EVOO, and break the stems off, and stuff the cap with "Soyrizo" brand vegetarian chorizo or soy Chorizo from "Frieda's" These are slightly spicy and would probably suit the taste buds of folks from India. They smoke very quickly and are juicy and tender. Folks that are not vegetarian even love these.

I am always careful not to smoke vegetarian dishes directly on the grill--but use a tray or rack. I also put them on the highest shelf so that meat being smoked at the same time is not dripping grease on the vegetarian food. The grease would probably make them better---but I must respect the poor vegetarians.

Grrrrr...just found out they dont eat mushrooms or fungus either. Geez this is just silly. Poor people, dont realize they are missing out on the joy of porky goodness!

they are vegan. They consider mushrooms (and other fungi) living organisms with, hold your breath, feelings! Go with the spaghetti squash, they will dig it!
