So have you ever made some ABT's and had a little bit of left over bacon and thought to yourself, "Now what am I going to do with these four strips?"
Sure you could freeze it up or you could try these little bad boys - Dragon Tongues as I call 'em.
Take a half slice of bacon and throw it in some really spicy rub, I've used my homemade chipotle rub here. Then I roll them up, and stick a toothpick to hold them together. But here's the genius part. Take a nice thick hot sauce - I've used Sriracha Hot Chili Sauce - and run a bead along the top. When it cooks the sauce just sits there all smoked and crunchy.....
Last time I made these I only did two and didn't manage to get any pics because they never actually hit a plate. I'm firing the ECB up in an hour, I'll throw an update up when they're done. _________________ WSM 22.5"

Sometimes I do sausages, sometimes I don't. This time I wanted to try a sweeter cream cheese so I mixed a half cup of Turbinado sugar into 400g of cream cheese. The mixture of sweet with spicy and smoky was awesome and a total hit at the party.

| Mmmhh, the dragon tongues look really delicious. I HAVE to try them myself soon. I often make my own chili sauce for BBQ and I am going to try the dragon tongues with my homemade sauce, I am really looking forward to checking them out. They could become a BBQ classic since it doesn't seem that it would be very difficult to get them right. |
