I have had a Char-Griller smokin' pro for the past couple of years but in that time ive done about 25 racks of baby backs. What works the best for me is the minion method. I use lump charcoal in the baskets, and kingsford to get it going.... I then toss on one or two chunks of hickory every hour or so. This last go this past weekend I did a 3-1-1 at 225-250 though and it turned out beautifully.
In the WSM I would definately try the minion method as I stated, and use one chunk of hickory every hour or so. If thats still too much you can try to wrap the chunk in foil and poke a couple holes in it.
The key here is to learn what works best for you. The first time I smoked meat with it tasted like liquid smoke infused jello, so dont feel too bad.
From what I've heard the WSM is a great smoker, and should turn out some great Q for you once you get in your zone. And if you just cant stand it anymore, I'll be happy to give it a good home..... Oh and far as a the separate grill thing goes... I also have a Weber Performer, and a gas grill... and a cast iron Hibachi grill.... and a folding campfire grill.... and many more to come.
