Hi all
Am totally new to BBQ - so I am looking for any suggestions/tips I can get in terms of what to cook, how to cook it, how long etc. I have a prehistoric style charcoal BBQ - in essence a metal tray for coals with a rack for grilling above it.
As you can tell I am totally clueless, so all your help will be gratefully accepted! I want to do a few trial runs of ideas before I invite anyone over!

keep reading this site and you will get some good tips on each item. On direct grill, I would start cooking burgers, steaks, fajitas these are all quick grill items and will help you get used to watching the fire and will force you to attend the grill during the cook. Once you get the hang of the heat you can move on to fancy cooking using indirect heat and maybe some smoking. Just my 2 cents. Good luck. _________________ Big Ron

Welcome to the ring. You will find vast amounts of information and help here. I agree with Big Ron. Start out grilling with direct heat using the equipment you have. Later you should be able to build a smoker or have one of the thousands of welders in Dubai build one for you. There are instructions in this forum for building smokers out of a drum (UDS) or from pipe, tanks, barrels, pottery, and just about anything else.
At least in Dubai you can get meat besides lamb and chicken. Good luck and don't be afraid to post questions. _________________ Brinkman Smoke N Pit Pro

I totally agree with you that I need to start out with what I have. I have a similar BBQ to this (except its square and has a more solid midplate - http://www.mensgiftshop.com/acatalog/oildrumext.jpg )
I'm quite lucky that out here I can virtually every meat/fish under the sun, and it's not badly priced - 30dhs/kg for Brazillian ribeye/striploin (thats $8/kg or just under $4/lb) and lamb is really cheap......shame that pork is so pricey here, but I'll have to work around it! Anyone tried BBQ camel??????
As for the smoker, it'll def be something to consider for the future - I'm prob only here for another 2 years then off somewhere new........whoever knows where that is!!!! But by then I'll dazzle the new neighbours with my skills  |

Take a look at all the threads with UDS in them, the ugly drum smoker can be made out of any clean (food grade) 55 gallon drum, and with minimum of tools, drills and wrenches (spanners).
Goat is good smoked, (kid or cabrito), older goat gets a little strong flavored and can get stringy.
Lamb is good both low and slow and hot and fast cooked.
Chicken is always a favorite as are Beef briskets, and top and bottom round does well, chuck roasts and London broils are good eats too.
If you are missing the bacon, you might think about making your own with a cure, and then cold or hot smoking it?
Camel roast up very well... so they say!  _________________ Here's a change Robert.

Yes I have had bbq camel in Oman. Be sure its a young one or it will probably be tough. Its not bad but the only time I had it, it was covered in so much seasoning and sauce that you couldn't really taste the meat.
I didn't find anything in Dubai reasonably priced. I thought everything was pretty high. _________________ Brinkman Smoke N Pit Pro

For me food is pretty reasonably priced in comparison to UK and Germany, no idea how it compares to elsewhere! Did you live here or visit?
As for camel - it seems to be the new in thing. A local restaurant just released the Emirates burger - made from fresh camel mince and another sells camel stews and kebabs. Surprising really, as you would pay more compensation for hitting a camel with a car than you would a human and they sell it for $5/6 a time! |

In this country, it really depends on where the human is from A human life is max 200,00 dirham, whilst a camel is 500,000. Perhaps you pay per pound  |

Think it was 70% people from India/Pakistan at last census, less than 10% of local origin, so odds are in your favour
I've been here 5 years now and it's shifting more and more towards the locals - fair enough I guess, look after your own. But while I can still have pork and beer I'm happy! That changes, I'm on the 1st flight to Europe...... |
