Hey all:

Came across some maple syrup sugar. Would like to make a rib rub. Any experience or thoughts about making a rub with maple syrup sugar. Can taste the maple syrup -- thinking about offsetting the sweetness with some sort of dried peppers for heat and salt.

I have used maple sugar in a rub for chicken wings and have given some thought to using it on ribs but I haven't done it yet- partly because maple sugar is expensive and partly because I don't know how well it will stand up to the heat of a long cook. I've noticed that maple sugar carmelizes more quickly than other sugars, so you may end up with some blackened ribs. If I may ask, how much a pound are you paying for maple sugar? Up here in Maine I pay $12-15/lb depending on the source. You might also try this-

Costs about twice that amount here down south. Thanks for the heads up about burning. Usually smoke the ribs at about 250. I dont put a lot of sugar in my rub, so I will try different amount on each slab. Maybe combine other sugars with it as well.

I make maple syrup, and have made maple sugar. I wouldn't recommend using the super-expensive (worth every penny) sugar in a rub.

It's way too easy to caramelize/burn it and you won't really pick up the flavor.

I do use some maple syrup in my sauce, and you can tell it's there.
