Wife wanted tri-tip so I tossed one the good ol' Weber kettle. Hit it with a healthy coat of The Rub Co. Santa Maria Style & Original Rub and let her rip. Pulled it at 130 internal and let rest for 10 minutes. Doesn't get any better than that!!! Hope you enjoy the pron.

Trimmed and ready for rub.

I sure wish they would carry them here more often. Y'all keep 'em out in Cali so we can't have any. Crying or Very sad

I've lived in Texas cattle country all my life and I never seen or heard of tr-tip until about 5 years ago. One of my huntin buddies cooked one at camp. Said he had to request it from the butcher. It was great. I'll have to talk to my H-E-B meat guy and see if he'll order some.

HEB should carry them I get them at mine though they don't always have them.

I wish i had tri tip that looks great Smile love the sliced shots. Right now i have been trying to use up the meat in the freezer, starting to get old, all my roast are getting turned into steaks with a salad on the side perfect for the diet. I will be trying a smoked meatloaf as well not sure why i have not done any of them yet lol.

There is no sugar in our Santa Maria Style Rub. Traditional Santa Maria Style Rubs do not contain sugar nor have I seen any that do.

I was able to snag 4 of them from a party that I catered yesterday. I bought a whole cryo-vac of them (9 total) and only needed 5 to feed this group but I cooked all 9.

I will vacuum pack them and use for Fajitas, French Dips, chili and other great dishes....Damn I love Tri-Tip. Laughing Laughing

Try Costco if you guys have one nearby. The ones here in Michigan have them all the time. Usually in packs of 2, but I usually by the whole cryovac of 7 or 8 and and freeze half of 'em or cook 'em all and have a big ol' Santa Maria BBQ for all my friends.
