Well.. I just finished my first week at my new gig. With rising gas prices and driving an F-150 I decided to take a job 5 minutes from home..

I was told by a good friend that a local a hot deli and BBQ beef emporium had an opening for head cook so I stopped by to see what was going on. The owner of the joint was looking for some one that is creative, has passion for good food and is willing to work. So, I told him he has found his man and I made the jump. It was had to leave the people I have worked with for years as you become like family but I had to think of my pocket book first and formost. I am getting paid 4 bucks more than the old place which is a kiss, more hours and I am saving about 300 a month on fuel for my ride. Can you say winning..Laughing

The menu is simple, we serve up pulled pork, smoked sliced pork, brisket along with smoked pulled chicken, corned beef and pastrami sandwiches. Fresh made coleslaw, potato salad and fresh cut fries. I also get to make the soups and chili which the customers are raving about so far. I also get to make all the sauces we serve and have been allowed to make what I see fit to serve which is cool..

We do a decent business so far as we are on a major highway leading to cottage country and we have not hit the busy season so far as this will come once folks are heading to the cottage each weekend and for vacation. At the moment we sell 2 briskets, a couple butts along with a pastrami and a corned beef every day and it is fun to get paid to cook up BBQ. The corned beef and pastrami are made from brisket as it should be.

Down the road the owner wants to add ribs to the menu, I wish it was sooner than later as I am looking forward to this.. Laughing We got to grow the business first.

Anyways, just wanted to let ya all know how the good folks at the smoke ring have effected my life. If it were not for the generous sharing of knowledge that goes on here I would not be able to do what I do..

Thanks to all you good folks for helping me hone my skills through the years.. Your the best group of sumb!tches there is..!!

I know with your cooking skills you will do very, very well.

Something to be said for having something a bit closer to home too.

Make your "CRACK" sauce for them. Pretty sure the business will grow quickly. nice to here something positive happening out there, you'll do well with your passion and work ethic. Very Happy

Congratulations!!!

A word (or two) of advice, you might want to consider making up a "pre-nup" so to speak. Saying any sauce, rub or anything else that YOU invent (make) is yours and yours alone and it DOES NOT belong to the place you work for. Get them and you to read and sign and ENJOY your new employment.

all the recipes I use are in my head and will never be written down on paper.. I do thank you. ya know, I may not be smart but I aint dump.Wink

We have 2 treagers, a lil tex in the kitchen and a BBQ150 that we use outside..

Congrats Roxie, I only wish I could stop in for the sampler platter. I can see this business growing with you in the kitchen... I love your sauces, the ones you shared so I know the ones in your head are even better...

I would talk to them about getting ribs asap.I sell the hell out of them. there wouldn't be rib fests if ribs weren't popular!and is the roxy sauce there?

It will be shorty, I am weaning the customers off the comercial BBQ sauce at the moment and have made a new spicy deli mustard that folks seem to like. I have served up some of the pulled pork sandwiches with slaw and the folks that had them really liked it.

At the moment, ribs would be hard for us to do because of space in the front of the house but we got a huge back room that will be converted into a kitchen with a new smoker and then plan is for ribs at that time along with a couple of smoked sausages that we will be making..

I have talked the owner into doing ribs a couple times as a special to see how they go over. Wink

While it may not seem like a big deal right now, you might consult an attorney. There is probably established Canadian legal precedent on this subject.

This sounds like a great job, it would suck to get cross wise with the owner over that issue.

As a business owner, I would never let my customers get attached to a product that I neither knew how to produce nor did not have a reliable source to purchase from.

Congrats on the job, it sounds like it will greatly improve your lifestyle...
