Posted: Feb 22 2010 Post subject: New Rub sound any good? |

After analyzing numerous recipes in order to understand the common ratios between different spices...and other such junk...
I came up with this:
7 Tbsp. Paprika
6 Tbsp. Salt
6 Tbsp. Brown Sugar
3 Tbsp. Black Pepper
2 Tbsp. Garlic Powder
2 Tbsp. Chili Powder
1 Tbsp. Sugar
2 tsp. Thyme
2 tsp. Oregano
1 tsp. Cayenne Pepper
(It seems brilliant on paper, and it smells good / tastes good, but I don't know how it will cook yet. Any rub advice would be appreciated.) |

| What are you going to rub it on? You might substitute turbinado sugar(also called raw sugar) for the brown sugar/sugar in the recipe, it doesn't burn as readily. The operative statement is that it tastes good to you, so try it out and let us know how it cooks. |

It is not rocket science making a rub. A little of this and a little of that until you get the flavor you like. It looks to be a little salty, but would have to taste it to tell you what I really thing. Best of luck _________________ Big Ron

| At the suggestion that it may be too salty, I added 2 more Tbsp. of Paprika and 1 more Tbsp. brown sugar. I used it on some pork chops I smoked today with cherry wood, and they were delicious. Very Memphis. |
