One of your temp problems MIGHT be that your gauges are mounted at the TOP of the cook chamber instead of at grate level. As heat rises, it would show hotter at the gauges than at the actual cooking level.
You gauges will show cooking at 200 when in fact your cooking grate is a lot lower temp.
Get yourself a probe (the one with a wire) and stick the probe through a potato so the sensor is sticking out and set it on the grate. This will give you accurate cooking temp at the grate level. |
