| I haven't really developed a favorite yet, as I've only cooked ribs twice. This last time I used Dizzy Dust and Bobbies' Original Seasoniong http://www.pigpals.net/products.asp the Bobbies' (the green one) is a no salt rub. Their Butt Dust does have salt. Both were pretty good. |

If you want a little heat but not overpowering I suggest using ground chipole and a hit of sweet paparika. _________________ Weber Performer 22"

I like this - slightly tweaked from a Cook's Illustrated recipe: 2 parts szechuan peppercorns, 1 part white peppercorns, 1 part black peppercorns, 1 part coriander seed, 1 part fennel seed, each toasted in a dry skillet & ground medium coarse. Kosher or sea salt, maybe a little brown sugar. A nice peppery rub that will stand up to hours of heat & smoke.
I've used it on ribs, & my new favorite, pork belly. |
