Shag bark has a thicker bark than the bitternut and also fewer limbs. The bitternut is usually found growing in the more low lying, wet areas.

Shag bark is what we use the most of here in the South. Shag bark is the big, tall straight hickory and doesn't have as many limbs. I'm thinking that the bitternut may take quite a while to season but I haven't used it for smoking so I can't help you there. It is probably more like live oak.

Dave C, how much are you having to pay for a cord. That will be alot of hickory. Ensure you have have it racked and off the ground and keep it dry. I just built two racks out of 2 X 4s and they will hold 1/2 cord.

Dave, I think that is the same as what we call "Scaley Bark" and "Pig Nuts". If it is they are both good, the Scaley Bark will give you more smoke though.

Be careful keeping it in the garage. I have had exterminators tell me that this could lead to termites.

That seems awfully cheap to me, What size stack are you talking about when it is stacked neatly. Maybe 4' tall, 8'wide, and 16"lengths? if so, that would be 1/3rd of a cord, if it is in 12" lengths, you would have 1/4 of a cord.
if this wood fit in a standard pick-up truck, you may have between 1/4 & 1/3rd of cord.

If I could find hickory for that price for an actual full cord, I would order 2 semi-loads of 10 full cords each.

Harry, I bet that is for what we call a "rick" which is 1/3 of a full cord, (16" long sticks).
A legal (as we know it here) full cord is 4' deep, 4' feet tall and 8 feet wide. Or 128 cu ft with a cost of about $120 for oak. Don't know about hickory, cause I go cut my own, I don't use that much.

Still not a bad price. You are going to really enjoy that hickory. A little goes a long way. Especially if it has been properly seasoned........

Kosher salt, cracked pepper or your favorite rub. Laughing Laughing Laughing

OK, seriously, how long has it been cut? It needs to season for at least 6 months. (~20% moisture content)
Just make sure you keep it off the ground or floor by a couple inches and keep it dry. It will wick up the water if you don't.

Here in Georgia, we have the powder post beetles that get into our wood, especially hickory, pecan and oak.

Watch for any fine sawdust that might appear on the wood. If you see that, get the wood out of the garage. These powder post beetles will devastate the 2X4's in your house.

I would suggest you put it outside, on a rack and cover it.

Dave C, totally agree with Catfish, I would not store it in your garage. If you want to get it seasoned properly, the natural air flow, sunshine and outdoor climate does wonders for seasoning green woood. I recently built two wood racks that cost me $30 in material. Super simple to construct and then you can store outdoors. When I get forecast of impending rain, all I do is throw a tarp over wood. I will take a few pix of the wood rack and send to you. If you are interested, I will send you the link to get the building plans. Only cost me $3.00 and I feel bad sending them direct because at that cheap price, I am very impressed that the vendor took the time and effort to make them available. Pix soon to follow. Later.......

Dave C, here are the pix I promised. Check out that nice stack of hickory. I split, was able to purchase whole logs pretty cheap and then spit. Hickory is like splitting rock, super hard, but well worth the effort.

Nice rack Bertram31. Nice smoker, too.

The tarp is great. Pull it back on good sunny days and let the air move through it.

Personally I am partial to Pecan but a lot of old timers that cook over open earthen pits swear by Bitternut.
