Okay, so I had planned a nice dinner with my wife and our two year old son Dustin. Well, things don't go as planned sometimes. A couple down the street that has a 19 month old son that Dustin gets along with. So, Beckie calls my wife Nikki and asked what we were going to do tonight, and my wife said nothing....so, they said they would bring over pizza and snacks...I think NOT!!!!! Shocked Shocked

I let them eat the chicken quarters and a SMALL piece of the ribe eye... Laughing Didn't cut the Tri-Tip as it is for a friend who offered to pay Very Happy Very Happy Very Happy me to smoke it for her after tasting the one I smoked last weekend...enjoy the photos. On the agenda tomorrow - a bone in pork shoulder, a small brisket and 2 yellowfin tuna ahi steaks....

Tri-Tip...

Ribe Eye Roast...

Chicken quarters....

Done...

Tri-Tip done...

And, the star of the show tonight...the Rib Eye Roast...all I can say is AMAZING!!!! Especially since I got it on sale for $3.99 a pound!!! A little over $17 for a $40 piece of meat...wow, it was delicious!!!

I am so glad I decided to smoke the Rib Eye Roast...it was full of flavor and had a nice smoked flavor as well. I might have to go get another one tomorrow while they are still on sale!

Thanks for looking, and I hope you enjoyed the photos...

Oh my! That Rib Roast looks awesome!

I have been wanting to do prime rib for awhile now.

What were the specs on the rub and the cooking process?

@ Geronimo - thanks for the nice words...it was a fun cook and the results were outstanding...i'll trade you some rib eye for some of the lobster ravioli!!! Very Happy Very Happy

@ Geronimo - thanks!!!!! it was a good decision to smoke the rib eye roast...will do one again soon!

@101 - thanks goodness i only had to drive 15 minutes to find the rib eye roast on sale for $3.99 a pound!!! it was very tasty...thanks for the nice words and for looking!!!

@ SmoknCamo & jednalf - i kept the rub really simple. i used Montreal Steak seasoning, a little cracked black peppercorn and some sea salt....i rubbed it with mustard, and then put a light coating of the montreal steak seasoning, the peppercorn and the seas salt..like i said, simple, but it was perfect (at least it was for us!)

it was 4.4 pounds, and i cooked it for about three hours.... temps range from about 226-240...i didn't touch it the first hour...when the first hour hit, i turned it over, spritzed both sides and closed the smoker back up...then i spritzed it evey half hour, and i pulled it at 147 internal degrees...i wrapped it in foil for about 45 minutes and sliced it as the crew was getting hungry...i don't like my beef bloody, so it was a bit rare for me...i would have let it rest n the foil for about an hour and a half and i think it would have been spot on (for me anyway)...of course the two end slices were more well done, the way i like it, so i grabbed one end and Nikki grabbed the other end...the neighbors liked it more rare, and thought is was perfect and delicious...

i used a slice this morning and cut it into small cubes...made omelettes with the rib eye, some muchrooms, some green onions and some cheese...YUMMY!!!!
