Hey guys-
As some of you know I'm deployed in the Sinai Peninsula in Egypt right now. Please don't kill me when I ask this but, I'm wondering about the best way to cook pork butts and spares in the oven. That's my only option right now. Should I just use my normal rub with liquid smoke or what. I'm trying to get the closest thing possible to my Q back home. I know it's not gonna be the same, but I'm game for anything right now. I'm getting a barrel from our base which I'll burn out REAL GOOD for a UDS but I'm having trouble getting cooking grates, a charcoal grate, and a lid over here for it though so I don't know if I'm gonna be able to make it happen. I have to get a lid because the barrel I'm getting doesn't have a removable one so I'll have to cut out the inside of the top. Thanks for any help!

You can use almost anything for a lid. I have seen plywood, sheet metal, and even a tarp draped over the UDS one time. If you PM me your addy I will try to send you a grate for cooking and a charcoal grate. It is the least I can do for someone serving our country.

Anybody see the post yesterday by txluke about the grill at BigLots for UDS parts? I got one, and it's still in the (unopened) box. It's 23"x23"x9". Can I send something that big? If so, get me an address!

You guys are unbelievable. This isn't what I was thinking about when I posted this, I was just kinda rambling, but regardless. I'll give my address through p.m.'s. How many barrels can you get. If we all start sending stuff, you might have enough stuff to make a few UDSs. Or we can all get together and split the cost of shipping the makings to him. Another question. Do you have access to charcoal?

Not sure about your unit..Get with you Motorpool guys if you have Strykers the anti-rocket Mesh on the skirts makes a great grill and they have the tools and torches necessary to make a helluva grill.. Personal experience there.. If you can get some make sure you burn it HOT the alkyd enamal (sp) paint is a PIA to get off.

Smoke'em - What diamter is your barrel and how tall is it, we usually make 16" baskets about 6.5" deep, but thats for a standard 55 gallon drum. Is that what you have?

I may have a grate or two that I can donate. I will have to check the size.

Will someone confirm the size needed? I think it is 22 - 22.5 inch diameter.

What about a Large Stainless Collander for the Charcoal basket?? OR make one from a Large Stainless Mixing bowl, just drill holes in it.

For the Lid.. perhaps, a Huge diameter Stainless mixing bowl exists ??? Mom had one almost big enough that she used to mix & rise bread in.

Its fairly common food prep stuff for commercial kitchens.. so it might not be hard to find in the market. Just ask food vendors where they get stuff like that Wink

Wink Wink Now for bundling together some supplies and rubs... I would be happy to pay a dollar or two more for a special batch of Big Ron's rub, if I knew that Big Ron was using that extra Dollar or Two, and a bunch more just like it to put together a care package. Wink

We're pretty good on our kitchen supplies. They send 9 of us out in the middle of nowhere on a little camp and we have to fend for ourselves, but we have a kitchen and most of the supplies including a meat thermometer. Spices are a little lacking though I will say. Don't get a lot in Egypt! Mostly is just the cooking grate and charcoal grate or whatever you use for a UDS. Have seen different versions. I have an offset at home, but hopefully will have a UDS;)
