Here`s a popular dry rub of JOS.

1/4 cup brown sugar
1/4 cup sweet paprika
1/4 cup kosher salt
3 tablespoons black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
1 teaspoon dried basil

Combine all ingredients and mix well

? for you Jeff,
Is this rub best suited for beef, pork or chicken?
I have ribs today and a brisket for tomorrow.

I have used it on ribs and not sure about brisket, cant remember. I bet it would be good though. It might not be sweet enough for most folks or too salty for others but i liked the balance of sweet, salt and color(paprika). Makes a lot of rub, ya might want to cut the recipe in half.

I put a nice 14lb brisket on @ 2:00am and used this rub - added extra 1/4 brown sugar and Tb Black Pepper

using a apple cider steam pan

looking for a mop - probably end up being apple juice and some coffee - any suggestions would be appreciated (pm / im)

went a drop over and wrapped the brisket a little late - but still what a awesome rub

add some whit sugar (2T) and a extra 1/4 C brown sugar - I used regular paprika for lack of sweet and maybe it made a slight difference.

used a bottle of apple cider for the steam pan

used apple juice with a Tblspn of instant folgers dissolved in hot water.

used some of the trimmings and juices with my beans - I think I might be the only feller eating this good up here............
