pyronoel - The cooker's lookin' good. hopefully you'll get done by August. I know the feeling. I'm hoping to have my build done by November. I'm having a BBQ contest in September maybe I can get you out to Dardenne Praire for it in September. _________________ 22" Weber OTS

When in sept? Where at?
...Last night I got the handles welded on, took the door off and painted.
A wire wheel in my angle grinder did a good job of cleaning the rust off the welds, and a DA did most of the rest.

I snuck a few hours of sanding and grinding in this afternoon and got the smoke chamber painted.
I'll have to break out the sand blaster to get in the grooves around the exhaust, and still have to weld on the hot plate on top of the firebox. -scored a 2x2' chunk of 1/2" tread plate the other day Get to see what the ole mig does turned wide open

Damper and fiberglass gasket is on the firebox door.
Sprayed canola oil all over the inside, and lit a fire. 1 Chimney of lump, and then 1/2 a chimney worth of un-lit lump dumped on top. Then added a few sticks over time... see below for temps....
I have a lot of smoke leaks around the smoker lid, and the firebox top lid. I plan to add the gasket to the smoker lid tomorrow.
First cook starts sat morning.
Firebox top lid is going to get a 1/2" plate for a hotplate, this weight along with the gasket should stop it from leaking.
I feel confident once I lower the fire grate in the firebox, seal the leaks, I will be able to get some good temps out of it.
4 Thermo's located on the lid, here are the temps:
8:00 -Light first fire
9:00 Add 1 stick
140 142
115 140
9:15
150 160
127 150
9:30 Add 2 sticks and push fire closer to smoker end:
162 175
140 165
9:45
168 210
170 200
10:00
178 188
163 184

Tonight:
Rebuilt the fire grate to lower it.
2 nights ago, got the gasket on the firebox:
Gasket around the smoke chamber.
7am I light the fire to cook!.... And while it's smoking all day, I work on the rest of the trailer.

First Cook on FNG cooker- And it went great!
Started the fire at 7:15
Keeping a modest fire in the box, kept the pit at 200-225 all day long. 10 Degree between Top Left, Top Right and Bottom Right. 25 deg drop on bottom left- smoke goes around that spot as it circles around the RF plate. Might put in a deflector to try to fix that.
4 Pork Butts went in at 8:15. 2 racks of ribs around 10:30, and some pork steaks later on. My bro made some ABT that kicked butt. Also wrapped some shrimp in bacon - never made it past the grill. And some Garlic cloves, wrapped in bacon- big hit.
ABT's and Pork Steaks were for family bbq.... butts were just to have They came off at 8:30pm
My brother (lives next door) came down the hill with his grill to cook some pork steaks- with a caramelized layer of Sweet baby rays.
Final conclusion: Pork Steaks are best either grilled with sauce, or grilled with a NC sauce as baste. Smoked just doesn't do them justice.

pyronoel, awesome job on your cook and cooker. The Butts look fantastic. Beautiful bark, and pulled great, that is a pan full of Goodness right there. The pork steaks and ABT's look mighty tasty as well. Very nice work indeed.  _________________ Always remember slow and steady wins the race.

I was really happy with the flavor of the rub. The bark had a very sweet, but a nice spice kick. Really nice once all broke up.
Just had my 2 pork sammies for breakfast, time to go work on the trailer. |

Too dern hot n humid to work on the pit today. only 80 tomorrow though!
The 4 temps while it's steady:
TOP Left 215 Right 227
Bottom Left 168 Right 215
The smoke goes out of the RF plate, and I think it's making a nice circle around the dome of the end of the tank, and just circling around that bottom left spot.
Wondering what the best way to solve this would be.
If I put a plate, hanging down on the left,,, will the top left then become a cool spot? - Or maybe a vertical tuning plate.
Suggestions welcome. |
