I posted this in the cookers section but it wasn't getting much action so I'll re-post here.
I'm finally going to build a big trailer smoker. I have the trailer and a buddy said he'd give me an old propane tank (he thought it was 500 gallon).
Couple of questions:
Has anyone put an internal divider in their smoker and mounted the firebox on the on the back side in the middle with a smoke feed hole going in to each side? That way I could only heat one side for smaller smokes or even cook at 2 different temps by controlling the dampers/stacks.
Also, how many turkeys could I expect to cook at one time on a rig this size?

Steve,
I believe somebody tried that and without 2 separate fireboxes and stacks, it didn't work. It's been a while since I saw the post. Sorry, maybe somebody else will jump in here with more experience on the big builds.
