Evening all. The first rib smoke went very well.Kudos to Roxy for the amazing rib glaze. If you guys haven't tried, it you should. First time with the ABT'S.
Lesson learned: ABT'S will take 1.5 hr. min.
Lesson learned: Take more care when positioning the ribs on the cooking rack. Mine stuck out past the water pan (no liquid) and were well done on the ends.
After 2 hrs. Ready to wrap.

After 1 hr in the foil. Add the ABT'S. Start basting.

Time to eat. With a cold home brew or two.

sparks58, As a guy who turned 1/2 rack of spares to charcoal by poor positioning, I can relate. It isn't as much the lack of moisture as the heat coming around the edges of the water pan that probably caused your problem. I would recommend either cutting the racks in 1/2 for a better fit or wrapping the ends in aluminum foil to prevent burning. You can run the ABT's around the outside for a slightly higher heat and better bacon crisping.
