Just do a Google search. Found this in under 5 seconds. There's lots more!

Sweet Red Pepper Relish

12 large sweet red peppers(about 4 1/2 lb.)
12 small yellow onions (about 2 lb.)
12 small golden Delicious apples (about 4 lb.)
3 qt. boiling water (about)
2 1/2 c. cider vinegar
2 1/2 c. cold water
2 1/2 c. sugar
4 tsp. pickling salt or Kosher salt

Core, seed and chop red peppers, medium coarse. Peel and chop onions, medium coarse. Peel, core and chop apples, medium coarse. Place vegetables and apples in a very large, heavy enamel or stainless steel pot. Pour in just enough of the boiling water to cover. Let stand 10 minutes. Meanwhile, combine vinegar, cold water, sugar and salt in medium-sized heavy enamel or stainless steel pan. Bring to boil over medium heat; stir to dissolve sugar. Lower heat; simmer, uncover 5 minutes. Drain vegetables and apple mixture well. Return to same pot. Pour in vinegar mixture, bring to full rolling boil. Remove from heat. Ladle relish immediately into hot, sterilized 1 pint canning jars, filling to within 1/4-inch of top. Run thin bladed nonmetallic spatula around inside of jars to release air bubbles. Wipe jar rims with damp cloth. Cover with hot tops and rims. Process jars in boiling water bath for 10 minutes (water should cover jars by 1 to 2 inches). Remove jars to wire rack. Let stand 12 hours to cool thoroughly. Test for seals. Label, date and store in cool, dark place at least 2 weeks before opening.

Sweet Pepper and Apple Relish

1 pt. chopped sweet red peppers
1 qt. apples, chopped
5 Tbsp. salt
2 Tbsp. celery seed
1 qt. vinegar
1 pt. chopped sweet green peppers
2 hot peppers
4 Tbsp. mustard seed
1/2 c. sugar
1 pt. chopped onions

Mix sweet red peppers, apples, onions, salt and celery seed. Cover with the salt and let stand overnight in a crock or enamel pan. Drain and add spices, sugar and vinegar. Pack into jars and put on caps; process in bath at simmering temperature for 15 minutes.
