I'm looking for a good crusted beef tenderloin recipe. Can somebody recommend something with mustard in the crust?

This recipe looks great!

I was thinking about trying to roast the tenderloin either partially or fully in my smoker for a little extra flavor. Whataya think? Would that be overkill?

Personally I'd give it a go.

But I'd try it at 300 instead of the 400 on the recipe, I'd put it straight on the smoker from the word go or you could sear it first in the pan, smother it with the mustard, horseradish and pepper mix, then put it an the smoker, I'd also just aim for an internal of 140 - 145* max!

Pink in the middle.

Yeah, that sounds like what I was thinking.
The only other thing I'm worried about is the weather. It'll be around the mid 30's here in Chicago when I spark up the the old smoker. I haven't really tried running it in the winter yet.

Instead of the tenderloin I've decided to do this:
Encrust steaks with some kind of black-pepper combo, sear them on a super hot grill and finish them on the smoker.
Has anybody done this? What pitfalls should I worry about?
For sure I'm concerned that I won't be able to keep the steaks in the smoker long enough for them to get any smoke flavor (can't dry them out!).
Any advice???

Or do I need a big piece of meat like a whole tenderloin to stand up to the cooking process?

Many posts here have spoken of a "reverse sear". in other words, smoke first, then finish on a hot grill before serving.

Personally, I've never done it, but I would think by smoking when the meat is not as warm and not already seared would allow the smoke to have more effect.

don't be afraid of the cold weather and the low temps...i used my smoker twice in the last three weeks when the outisde temps were 9 degrees and 13 degrees...and i was in shorts!!! love it...
