No, my Q's not Championship Q. Q for the game! What game? you ask. Why that would be Bama's 13th National Championship, of course. I hope!

I took off work today to get my mind right for the big game tonight. I hope all my hard work pays off. LOL
I got a small 3lb. butt and one rack of spares going right now with a new (to me) brand of lump and pecan. 35lb bag of lump for $26.50 at The Grilling Room. I gave it a mustard slather and Big Ron's massage prior to going in the OK Joe sauna.
Trying a new technique with my charcoal basket. I saw several others doing this where the charcoal forms an "s" to create a longer controlled burn. I didn't commit to it enough yet to weld it in place, but I just jabbed a couple of pieces of plate steel down into the basket and filled in around it with charcoal.
We're getting a dusting of snow. Around here this is called a blizzard. Here is the chimney getting going with my snowy yard in the background.

It's getting there. Nice temps across the grate.
ET-73 just after putting the meat on the smoker.
I just had a terrible thought! I'm cooking this on a (gasp!) Longhorn! What have I done? I know, I'll just rename the smoker. I'll call it ... Bear!

You will likely need to put a spacer in the direction plates as heat transfer between the metal will likely be enough to start the coals on the other side.
Something like this:

I like the 2 method and go fat up the first half of the cook, fat down the 3rd quarter, and fat up the 4th quarter, but only if it came from the left hand side of a beast, if it was from the right hand side I do it the other way round!  _________________ Here's a change Robert.

Crazychef/Allsmokenofire The "8" method rocks, or so I hear. There is some debate on whether the "B" is better.
Teleking You're probably right. I did have some burn past the plates, but not bad.
Yossarian The snow started here at about 7 or 8am. It quit about 3pm. We probably got <1". It was enough to mostly cover the grass. Looks pretty out in the woods behind the house.
Soezzy I started to put the fat to the side just to start the debate.
I'm at 172 on the butt right now. The ribs have been wrapped for an hour and 15 mins, so far. I did the brown sugar/blue bottle/honey trick this time too. Updates coming! And maybe some smack talk for you Longhorns out there.

Here's the update. I hope they're ok, but Texas may not have enough QB's to finish the game.
Q came off at 7pm. Just in time! Now my belly's full and after the initial drama, I'm starting to enjoy this game.

I'm thinking we'd be in trouble if Colt was still in there. May be anyway. Our offense isn't looking that good, and defense is sporadic.
