So I figured I would start working on a couple of chicken recipes today, so here were the results. I made some traditional Texas BBQ thighs as well as some Caribbean Jerk thighs. The neighbors seemed to enjoy them.
Just hitting the smoker.

The neighbors as well as my QUALITY CONTROL DEPARTMENT (the kids) loved these chicken samples. Laughing

Great looking bird. Which flavor was the most preferred? I think it would be hard to choose.

I see that there are ten thighs on the smoker, and only nine in the pics. I'm guessing it's because the missing Jerk thigh is on it's way to me, right Wink Looks awesome Dawgfatha. Cool

I had one of the thigh skins rip so I din't include it in the pic. Still was just as good though. Laughing

Thanks KAM. I appreciate it. The jerk is the best!!! I love it hot, but I tend to forget that sometimes I am in the minority on that in the house. This was really spicy, but it was a "ninja" like spicy. You got that nicely sweet, earthy jerk flavor followed by the heating of the lips and the tongue. Laughing
