Not going to say alot.
Duck hunting in the A.M.
Thin sliced chicken breast..



The stuffing.Sun Dried Tomatoes,onions,mushrooms,olives,garlic.
Angle hair pasta slow simmered chicken breast and pepperoni



Chicken is finished.

Ready to roll

Alright here is my entry. Hope I made it before before the deadline. This TOTALLY my Daughters show. She named the ingredients, built it and rolled it with very minimal help from me Wink . i am so proud of her. Her first Fattie Shocked . Hope this doesn't come back to haunt me later.

Breakfast Fattie; Ingredients; JD Sausage Roll, eggs,cheese,spinach, Red Bell Peppers, smoke sausage link, Bacon.

Building it layer by layer.

Rolled and wrapped for overnight firm up.



Onto the Smoker in 18 degree weather this morning. She of course passed on this part. Oh yeah, 2 racks Baby backs and of course ABT's.

This has been a lot of fun. Hopefully we made it.

cooking potatoes, peppers and onions

sausage, potatoe and peppers

roasted jalepeno garlic butter

Allright here it is. Gran Papa Panson - translated= Big Daddy Fattie
It was one of the coldest days so far this winter. It was 3 degrees when I started the UDS. Below zero by the time it was done. So I put a dryer vent onto the Weber lid and vented it out the garage window. Worked great. By no means was it warm but at least behind walls.



The sausage = 4 LBS GFS Whole Hog Sausage - Lightly Seasoned

Ingredients:
In the Rub -Granulated Garlic, Onion Powder,White Pepper, Fresh Ground Black Pepper, Spanish Paprika and Turbinado sugar, 2 types of Sazon Goya seasoning one with Azafran ( I think thats Saffron) and one with Coriander and Annatto.

In the Molle/Chipotle/Cafe Patron/Cherry Sauce
Dona Marie- Molle, 3 Chipotle Ppers w/ sauce, 2 Shots of Cafe Patron Tequila, 1/2 Can Tart Cherrys, Cup BBQ Sauce- I used a variety a local guy makes. Abuelita ( Mexican Choc Mix) and Chicken Broth. All warmed and blended on the stovetop to enhance the flavors and allowed to cool.

The remaining stuffing ingredients
Roasted and skins removed Poblano, Sweet Red & Yellow, Jalapeno peppers, onions. Black olives.
Queso Fresco, Chihuahua and cream cheese.
Sliced honey ham & wrapped in Prosciutto.... good luck boys cause your gonna need it!!

I think you'll enjoy the ingenuity of the techniques used in "building" this fattie.
BTW - This tasted priceless!!






The sausage - approx length = 34" Shocked


With a coating of Molle


With rub applied....


Then a problem... the cream cheese didn't want to spread out on the sausage too well. So my Sous chef AL said "Damn, too bad we don't have a blast freezer". I thought for a few seconds... WE DO! It was outside.
Spread it onto flexible cutting sheets and took outside. So below is the cream cheese on top of the Weber gasser and how it turned out in about 15 min or less it was frozen stiff. Sliced it to the width I wanted a laid it on there.




With all three Cheeses....


With all the veggies....first row is Jalapeno skewer stuffed black olives



With the ham..... I then brushed on more Molle sauce before rolling


Rolled up....this was a two man job. Used the flexible cutting sheets again to lift the sausage off the board and get it rolling.



Wrapped in Prosciutto


Wrapped in EVOO soaked cheesecloth....


On the smoker and my game face......


Off the Smoker after 4 hours on a bed of Spinach....


A Slice above all the rest!!!


It was good this morning too with egg and smoked beer bread toast


Good luck to all.... I had a blast in doing this and I owe thanks to my Sous Chef Al...my roommate. Also my girlfriend for taking a few pics the help with cleaning up the mess.
