The wait is over!
We decided to slice the fattie a little bit ago and WOW, it was REALLY GOOD!
Here is Candis making the first cut
Here are shots of the innards of the critter!
Candis said this about the taste of the fattie; "It either needs more cheese on the inside, or it needs a cheese sauce topping."
I have to say it was MUCH better than I thought it would be and really look forward to hearing what the folks at work have to say about it tomorrow.
For those that are wondering; Yes, it would have been MUCH better smoked...

it looks great Charlie!!! i agree with your wife, i think a cheese sauce would be awesome!!!! i am off the rest of the year, but wish i worked with you tomorrow a.m.!!!!  |

Candis, congrats on a job well done. You did an awesome job on that fattie I see a slice of that on a Hoagie bun with a little au jus drizzled on top. Nicely done.
And Charlie quit being so stingy with your buzzard cooker  _________________ Always remember slow and steady wins the race.

Could be a lesson to be learnt hear Charlie, when posting pic's of an awesome looking fattie that you have not cooked youself
such as the one presented by Candis ( that looks outstanding ) --- you should make the pic's a little blury so you won't cop such a ribbing next time

maybe some jimmy dean sausage meat might help eliminate the extra cheese sauce etc...
the nice greasy extra flavor might be what puts it over the edge
although not so philly cheese staek....
i doubt it would hurt it...
but on a hero roll, some tostitos chili con queso...some hot sauce..

Candis appreciates all of the replies and compliments. She doesn't cook often, but when she does she usually whips up a good meal!
I have a feeling that I may have a new partner in crime after this one!
The food was great, she was a lot of fun to watch, and with her being a perfectionist it could help the scores in the future!!!
Either that or I need to get the new pit built before she takes this one over!

Here is my first fatty the morning after. My daughter had the camera so i dont have pictures of the process. I used sliced ham, cheddar cheese, and scambled eggs and a little brown sugar. Into the Lump charcoal smoker and apple wood chips
I got totally frazzled when it came to that weave pattern. I did not realize how difficult it was so i just started wrapping bacon around it
Re heating in cast iron Pan. To me i just don't seem right to nuke it after patiently waiting and nursing for 2 plus hours in the smoker
Mmmmm Maple syrup , Yea its not a magazine picture but I just hope mrs Cranky approves
Thank you Mrs. Cranky and others for posting how too make a Fatty. I have been spared going to the butcher shop and asking for a Fatty and around here that could be dangerous there are some big mama bears behind some butcher counters that may have taken the Fatty comment the wrong way.  _________________ Curtis M

Top-flight fattie there.
For a 'sauce' I would recommend the traditional Philly cheese steak ingredient, Cheese Whiz (hey, don't knock it 'till you try it.)
Slap a hot slice of that on some sourdough, add a squirt or 2 of processed canned cheese product and you have the centerpiece for a lunch that will be the envy of your co-workers.
