Here's a bit of cooking from Spain called Escalivada (ESS-CALL-EE-VA-DAH). In the most basic terms, it's a grilled salad. Every ingredient can be cooked over direct heat and you can add any spices or seasonings that taste good with grilled veggies
Ingredients:
• 4 Eggplants
• 4 Red peppers
• 2 Tomatoes
• Extra Virgin Olive Oil
• 2 cloves garlic, sliced
• Salt
• 4 Green Onions
Procedure:
1. Prepare a hot fire in a charcoal grill
2. Apply oil to the eggplants, peppers, tomatoes and onions.
3. Place vegetables on grill and cook, turning frequently for 15 to 30 minutes or until the skins of black change and vegetables are tender.
4. Remove vegetables from grill and put them in plastic bags and allow to cool 1 hour.
5. Remove the vegetables and peel (peel the outside layer of the onion).
6. Slice the peppers, remove seeds, remove the stem and slice it by its length and place in a bowl.
7. Do the same for eggplants and tomatoes and add to bowl with peppers.
8. Slice onions into rings and add to the bowl with the garlic.
9. Add 1 / 3 cup oil and salt and stir
10. Serve the salad at room temperature. |
