does anyone know any good recipes for elote (pronounced AY-LOW-TAY for those who don't speak spanish)? I've heard that it's very good even though it sound weird, but I'm not sure how to go about with cooking it. Here are the ingredients that everyone seems to agree on:
Mayonnaise
Butter
Salt
Chile Powder
Lime Juice |

Made some last night with some Tacos de Pollo.
Most of the taquerias here in OKC don't serve it on the cob though so I made mine more like a casserole.
Corn
Garlic
Mayonnaise
Parmesan
Cayenne
Lime Juice
That's about it... You can find a lot of recipes for it with a Google search. _________________ I only believe in two basic food groups... Chili & BBQ

| Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge. Just like I used to eat from the street vendors in Mexico. |

| In the hood, you can smell these corn carts from the next street over. I personally think they are absolutely disgusting but I'm no one to judge. I know the fixin's are usually grilled corn, butter, mayo, sometimes (parmesan cheese), and really spicy mexican chili powder. I would recommend preparing and eating them outside or I'm sure your house will stink to high heaven. Good Luck! |
