Jarhead, I have been on the receiving end of their lashings Shocked he!! I am married to one of them. ( looking around to make sure the coast is clear) They will put you in the hurt locker Brother. I am going to be building on a cooker if the weather permits it, but I will be looking for a smoke signal to come pull you guys tits out the ringer if need be. Laughing Wheres Dan at? Is he going to play?

Of course like all the other T/D's we have had, the only black billowing smoke I will be seeing will be coming from the ladies cookers or EBO's which ever they choose to destroy.Laughing

IKWYM: my family/friends had an inkling I was nuts after smoking birds in a snow storm a couple years ago. . . their suspicions were confirmed when I started taking pictures (and closeups) of the food. . . . Shocked Laughing THEY JUST DON'T UNDERSTAND!!!!!!!!! Wink

For now I'll just post my recipe, so that you know what I'm makin'. Only missing one ingredient. But, I'll find one before the TD.

Possum Holler Chili

Ingredients:
1 large onion, chopped
2 TBSP oil
2 lb possum, chili-grind
28 oz canned tomatoes, undrained
1 tsp sugar
2 tsp cumin
2 tsp paprika
1 large clove garlic, minced
1 bottle beer
2 fresh jalapenos, chopped
5 TBSP chili powder
salt and cayenne to taste
4 TBSP Corn Masa, for thickening

Instructions:
In a medium pot over medium-high heat, saute onion in oil. Add ground possum and stir until browned, reserve grease for cornbread. Add tomatoes, sugar, cumin, paprika, garlic, beer, jalapenos, chili powder, salt and cayenne pepper to taste. Cook uncovered, over medium-low heat until thick, about 1-1/2 hours. This is best done in a BBQ Pit with a Cast Iron Dutch Oven.

Thicken with Masa, if needed. When ready to serve, put into a large bowl, and let the guests serve themselves.

Hint: Just before serving, pour Tequila over it and carefully light. Serve with Possum Fat Cornbread.

Makes 8 servings

Tip: 3 day old roadkill is more tender and easier to skin and grind.

I haven't been a judge on this forum yet, but I have on various other ones. . . As judges, we would Instant Message (or PM) our decisions (and supporting reasons) back and forth. One of the judges was deemed "the lead" and would compile the results of the other judges then announce results on the blog or thread.

Not sure how it's done here. . . Anyone who's been a judge here wanna chime in????
