You mean this CliffC
Buffalo Theory
'Well you see, Norm, it's like this . . . A herd of buffalo can only move as fast as the slowest buffalo. And when the herd is hunted, it is the slowest and weakest ones at the back that are killed first. This natural selection is good for the herd as a whole, because the general speed and health of the whole group keeps improving by the regular killing of the weakest members.
In much the same way, the human brain can only operate as fast as the slowest brain cells. Now, as we know, excessive intake of alcohol kills brain cells. But naturally, it attacks the slowest and weakest brain cells first. In this way, regular consumption of beer eliminates the weaker brain cells, making the brain a faster and more efficient machine.
And that, Norm, is why you always feel smarter after a few beers.'

Holy Toledo!! Ya’ll are kickin’ out some fine apps and I love those game faces!!!
Well. . . looks like it’s time to face the music and post my entries. . . I did 2 appetizers this go around: Sausage cream cheese pastries and Lil smokies biscuits – here's the first one:
Sausage Cream Cheese in puff pastry:
Total Prep time: 15 minutes
Finish Baking time: 5 minutes
# of ingredients: 7
INGREDIENTS:
Puff pastry – shells are quicker but sheets allow you to cut the exact size you want
2# Jimmy Dean sausage (I usually go with 1# hot and 1# regular so it’s not too spicy for the rest of the family)
2 pkgs cream cheese
1 medium onion (white), diced
1 tsp minced garlic
2 tsps dried thyme
1 Tbsp onion powder
PREPARATION (smack talk included):
Most of this requires multi-tasking, so you men will likely have a difficult time with this recipe. . . It’s okay, the women-folk understand. . . .
Par-bake the puff pastry shells (or you can make squares out of the puff pastry sheets – either way is fine) at the recommended temp but cut the cooking time to 12 minutes.
SIMULATANEOUSLY brown the sausage (~3 mins), then add in the onions and sauté for 2 minutes – add in the garlic, thyme and onion powder and cook for 30 seconds.
Remove from heat and dump in the softened cream cheese and break up into chunks – it’ll start melting into the sausage as you mix it – about 3 minutes.
Remove the centers from the shells (or make an indent if using pastry sheets) and fill par-baked puff-pastry pieces or cups with the sausage mixture (about 2-3 Tbsps per cup or piece – make sure they’re mounded up).
Broiled on low for 2 -4 minutes, until bubbly and tops are browned. Alow to cool for 5 minutes then serve (hot filling will blister the roof of your mouth):
(note: the sausage filling can be used to stuff mushrooms as well – they’re awesome!)
These can also be done with italian sausage and goat cheese - they are AMAZING and go great with red wine! _________________

My second entry. . . .
App #2
Lil Smokies Biscuits:
Total Prep time: < 8 minutes
Finish Baking time: 15 minutes
# of ingredients: 3
INGREDIENTS:
1 can pillsbury Grands buttermilk biscuits
1 package Lil Smokies
Habañero pepper jelly (hotter is better!)
PREPARATION:
Split each of the 8 biscuits in half by pulling them apart from the edges - making 16 full rounds. – 4 minutes
Place approximately 1 tsp of habañero pepper jelly on each biscuit round. Put 1 or 2 smokies in center of biscuit and wrap around the smokey, making sure to squeeze the edges together very well so they don’t come apart. - 3 minutes
Bake for 12-15 minutes on cookie sheet lined with parchment (the jelly will caramelize and become a PITA to clean later). Here are the finished pics:
Well, there you go . . . . _________________

Yah, jeepdad, K.A.M., and whitey sure like their EBOs. . . . I'm betting their wives are relieved as they can't burn the food too badly. . . . You can join 'em when you get yours fixed. . . _________________

I know! These are great for camping too! And it SO brings back memories - used to get these when I was in high school (WAAAAY back in the day. . . ) at the football games - they called 'em "Pepper Bellies" - add those jarred jap peppers to the top and they're exactly like the picture!
