| While I have never heard of Bismarkin sausage, Granzin's meat Market in New Braunfels has just about every sausage I can think of, and most meats. They even have the hard to find Panas so you might try them to at least point you in the right direction. |

http://www.nbsmokehouse.com/Item/Details?item=698 Bismarkian is a registered trademark, so the recipe is probably a closely guarded secret.
But if you read the ingredient list, it's Beef, Pork, water.
They also describe it as a Summer Sausage, so you might just look at summer sausage recipes that have Beef as the major ingredient and pork as a lower % ingredient! _________________ Here's a change Robert.
