Anyone know where I can find a sausage recipe similar to this?

While I have never heard of Bismarkin sausage, Granzin's meat Market in New Braunfels has just about every sausage I can think of, and most meats. They even have the hard to find Panas so you might try them to at least point you in the right direction.

But if you read the ingredient list, it's Beef, Pork, water.

They also describe it as a Summer Sausage, so you might just look at summer sausage recipes that have Beef as the major ingredient and pork as a lower % ingredient!
