Strictly a backyard hobby for me, but when making rubs and sauce, I shop for the best quality spices I can find, except for the chili powder, which I make myself.
I've been tossing around the idea of making my own ketchup, garlic, and onion powder. Before I invest in a dehydrator and other supplies and the time involved (it pretty much takes a Saturday to make ketchup) I thought I'd ask if anyone has tried this before.
When I think about it, I figure it's just as likely to take my BBQ sauce to the next level as it is to be a dud. e.g. Maybe homemade ketchup is great in a sauce, or maybe it's just good on a hamburger but the mass-produced, processed Heinz ketchup adds something that is necessary in a good sauce? I just don't know because I've never done it before.
Also, anyone have any experience making their own garlic/onion powder? Not sure but I'm imagining that they might carry a stronger flavor than storebought, and am wondering if I might need to cut back on the amount I normally use.
Any opinions are welcome. Just trying to decide if it's worth giving a try. |

| I've made ketchup twice, which was a pita. I put too much allspice in second try. Onion or garlic powder would seem to be more straightforward. But trust me something will go wrong, probably in longevity or dryness. Let us know what happens. |

My wife has asked me to make ketchup one time to see how it is. It's just not economical for me to do so right now. Maybe one day I'll do it. Like you said, it will take a whole Saturday. I have a very small kitchen, and 3 small children who like to run through it playing. Nope. Not gonna try it right now.
I've got Paul Kirk's book, and he's got some good recipes for ketchup that I'd like to try. Good luck in all your endeavors and let us know how it all turns out. _________________ "Never trust a skinny cook."
