Dude, tell me about it. 800 Degreees is where it at. I been there and done the opposite end of the spectrum.
Here I am a couple years ago with my smoker. They said "Low & Slow"... so I did. Wet wood, smoker insulated with 120 lbs of ice. 25F rack temp. I planned to slice out some Brisket & ABT's for the kiddies on Halloween. Three days into the cook, and the meat aint any warmer than the cold beer. So we ended up handing out Candy.
Theres lots of thick, white low laying smoke.
Them USENET days in the 90's was better for some folks. All this moderation watering things down, and they sure didnt water it down with Whiskey.  _________________ Traeger 075 "Big Tex"

I was confused. Until I figured out that you are checking the temperature in the “Fire Box”.
You need to be checking it where the meat is. It needs to be around 225-250F for “Smoking” in an offset smoker, but will be higher if you’re “Grilling” directly over the coals on a grill. An 800F fire should not have burned a hole in the firebox unless it was already rusted out.
Fixing it so it won’t leak will take a welder and some patch metal.
Also Dave, don’t take no junk off these guys. Give some back.
