| I am tasked with the turkey this year. I am going to smoke 2 birds on my big green egg. I purchased the turkeys tonight, and I purchased a 15 pounder, and a 19 pounder. I saw on a site, that the bird should be between 10 to 13 pounds. Are the birds I bought too large? Should I do them in the oven, and pick up a couple of smaller birds to smoke? |

I cook 22 - 24 lbs most of the time, I brine them first I don't stuff them, and they come out fine, for the most part the biggest question question for me is always one of room in the pit.
The smaller birds are easier to handle and cook quicker, but if you're cooking for a crowd I like to do one bird not two, JM2C! _________________ Here's a change Robert.

If you can cook it in the oven, you can cook it in the smoker. Just ramp up your temps to at or near oven temps. I cook turkeys at 325° - 350°. _________________
