I've been wanting to try this, and I think I have a pretty good recipe. My wife and I love hot veggy relish!
Here's the ingredients you'll need
* ~14 large jalapenos
* 4 carrots, cut into 1/2-inch chunks
* cauliflower bunch, cut into 1-inch flowerettes
* 2 large onions cut to preference
* 2 garlic bunches
* 5 cups vinegar
* 5 cups water
* 2 tablespoons pickling salt
* 2 tablespoons sugar, if desired
* 1 Tbls dill
I bought ALL of the ingredients, including the jars for $21.
Mix the vin/water/salt/sugar/dill in a large pot and bring to a boil. Get your water bath going! It takes awhile to boil that much water.
Chop up all your veggies in a large bowl and mix well.
Fill your sterile HOT jars leaving a 1/2" head space. Ladle in HOT liquid leaving 1/4" headspace. Wipe jar tops clean and put lids on.
Put your bounty in the water bath and process for 15 minutes.
Take out of bath and let cool overnight!
After the jars are sealed you can store them for up to a year in the pantry. As always, if you don't have any jars that seal just store them in the fridge for up to a month. Enjoy!
