After reading multiple threads about making a fattie, I finally decided to make one.
The ingredients that I used

The onion, cayenne pepper, banana pepper, and bell pepper sauteed

Ready to be rolled up

Wrapped in BACON and sprinkled with sweet mesquite seasoning
[img]
Ready to come off the smoker, holding at about 160-170
[/img]
Sliced and ready to eat, no plate shots it went right on a bun

Did one of these in October . . .
Your ingredients topped mine,
I, however, used deli made bulk Italian sausage...
and it was ... how did Tony the Tiger proclaim his flakes....?

Devildog I have done a good many fatties in my day. All I have to say is Damn!

That is a beautiful fattie for the first one! Very Happy

Very nice! I love the ingredients and attention to detail. A big part of great food is appearance!

What is that lunch meat that you have on there?
I am getting ready to do a benefit for a good friend this weekend with ABT's, PP's and a couple hams. Now I'm thinking fatties too.

@ Jarhead I used canadian bacon for the lunch meat and pepperoni slices. Semper Fi
@ Beertooth thanks, my first job way back in the day was food service so I still remember how to make a presentation, and being in the Corps had a lot to do with attention to detail.

The good thing is I still have enough ingredients to make another, maybe I'll make one with some pasta in it this time, photos to follow when completed.
