After the cold front came through Sunday night, I knew I had to cook up a batch of chicken and dumplings. It's a favorite around our house when there is a chill in the air. It hit just the right spot, too.
I really don't have an exact recipe but I will tell you how I do it. First, I boil a whole chicken or chicken pieces. This time I used 5 leg quarters. You can cheat and use boneless chicken breasts, but I think you get a lot more flavor in the stock if you do a whole chicken or chicken pieces. When it is done, remove from pot and de-bone. Shred chicken and add back to the pot with all of the remaining stock and continue to boil. Then, slice a whole package of large flour tortillas into 1" wide strips and then cut some of the longer strips in half. Add them to the pot slowly - about a handful at a time and stir in. They will swell up in the pot pretty fast, so you may or may not need to use all of them. I have had to add water to the pot before because I put too many in there and it got it too thick. Then, add salt (I use coarse salt - Kosher or Sea Salt) and garlic salt to taste and parsley flakes. The long part is boiling the chicken - everything else goes really fast. I can do a whole batch in about an hour and 20 min or so. Enjoy!
Boil Chicken
Cut Flour Tortillas into strips
Remove chicken, de-bone/shred and add meat back to the pot
Slowly add strips to the pot
Season to taste
Finished Goodness

| Nicely done Tex_Toby. I have never thought of using tortillas as the dumplings. I will have to give this a try. Thanks for sharing. |
