Tonight was a milestone for me. I made my first REALLY good food on my smoker.
I wanted to do a butt but couldn't find it locally so I used a pork roast. It was pretty tiny at only 2 pounds but I thought it would be a good experiment.
Last night I gave the whole thing a rub in yellow mustard. Then I used my own dry rub of paprika, garlic powder, onion powder, black pepper, and brown sugar. I wrapped it tightly in plastic wrap and put it in the fridge.
This afternoon I fired up the smoker and once she was chugging along nicely at 250 I put on the roast and my favorite smoked item, baked potatoes. Here she is. You can see my next load of wood sitting on the bottom barrel getting pre-heated.
2 1/2 Hours later she was at 165 so I foiled. I had been frequently spritzing with an apple cider/whiskey mix to help keep the exterior moist until now.
In less than 40 minutes the temp shot up to 195 so I figured it was time to pull it. I didn't expect a 30 degree climb that fast! I wrapped it in a towel and put it in the cooler. Here we are on the run to 200!
It never made 200, I saw 199 but it started dropping after that. After 30 minutes it was back down to 188 and I couldn't wait anymore! I had to see if this thing was going to shred. Here it is freshly unfoiled. The smell was amazing!

The pork literally fell apart when I shredded it. I knew it was going to good at this point. After it was all shredded I added some of the sauce and mixed it all together. Here it is.
This was MILES ahead of my other cooks so far. It was just amazing. Perfect flavor, very tender, juicy, How could I argue? I had planned on making sandwiches with it, but it was so darn good my wife and I just put it on our plates and went to town! This stuff was GOOD!
I'm slowly getting better at this. Every cook I learn a bit more. Brisket is coming next. That should be a real challenge! |

Maine Man, that looks like some mighty tasty pork you turned out. Gotta be careful with those small quantities like that though, there usually aint no leftovers for lunch the next day. _________________ Propane is for frying, not Que!
