So my Duaghter who is a Proffesional Personal Chef from NY will be here on Friday. We are going to do a braising of something for a magazine article on her. But before we do this, I want to blow her socks off with some ABT's. She has never had one and this may be my last chance to blow her away. So send me your best.

I use large jalapenos cut down middle and seeds and all membrane removed. Pepper Jack or Chipolte Chedder laid in with one little smokey and then strip of same cheese on top and wrap in piece of bacon. Add 2 toothpicks to hold together and smoke for 2 - 2 1/2 hr at 250 or 275. ENJOY. You can try different cheeses, some hollow out and put cream cheese in them and wrap but I like the little smokies.

I do my ABT's in halves. I cut the jalapenos in half long ways, clean out seeds and membrane (the more membrane that is left in the hotter they will be), stuff with pepper jack cheese, roll-up 3 or 4 turkey pepperoni slices and stuff in the middle also, wrap all this up in turkey bacon and cook 2 hours at 225.

I like the consistency and taste of turkey bacon plus it is like duct tape compared to regular bacon.

I do mine in halves as well. I cut them lengthwise, clean out seeds and membrane, fill with some cream cheese, a little strip of chicken breast then wrap in bacon.

Smoke about 2 hours at 225-250.

We have been using banana peppers split length ways stuff with cream cheese mixed with sausage a little smokey and wrapped with bacon. For some reason our jalapenos are smokin hot this year.

I like to mix green onion with the cream cheese and use cooked fresh chorizo for the sausage. Japp halves, Bacon wrapped, dusted with your favorite rub
You will impress no matter which way you go!

I really like mine better with a whole jalepeno. There is usually zero to very little heat with the membrane and seeds removed. I stuff mine with cream cheese (neufungaulenheimerist works too), little smokey, and usually a bit of cheddar as well. I wrap with maple bacon and cook with cherry which gives just a hint of sweetness I think is fantastic. Sometimes I sprinkle some rub on 'em too, but you don't need to. Commence sock blowing off Laughing

cream cheese/jack/cheddar mix
Italian sausage meat
wrapped in applewood smoked bacon


IMO the sausage meat is better than the little smokey's

My wife cant do the heat so I make hers using the mini sweet bell beppers, yellow, orange and red. Cream cheese and a little smokie wrapped w/ bacon. Apple wood 2 1/2 hrs at 250

halfed, hollowed out, simple cream cheese, or even pimento cheese. I have been wanting to try them with mexican chorizo sausage and cheese, and also spiced baby shrimps with cheese as well. Good luck!

I just do the basic cream cheese with my fav rub, little smokie wrapped in bacon with a 1/2 jalepeno.
