Sunday had the look of a beautiful day so when Mrs K.C. called me on Saturday and said they had pretty but small prime ribs for $4.77 lb at Costco I said "Oh Yeah"
This was a 2 rib 4.7 lb cut.
Kosher salt, Cracked Black and a little Montreal Seasoning
This is the Hickory!
Beef is in the house.
Almost dinner time.
Gotta have me some good horseradish.
Dinner is served.

At what temp do you cook a beautiful piece of meat like that? Are you smoking it, or is it more of an indirect roast (with some smoke obviously)? _________________ Addicted to ABT's |

Thanks guys ....that is the smallest one I've ever done....usually I'm in the 7.5 -8 lb range.
Yossarian that is cooked on the offset smoker....basically that was one or 2 chimneys of lump in the fire box to build a base and probably 12 splits of hickory over a 4 - 4.5 hr cook. Usually running around 240. The smoker pictured was just as it was put on....meat went to the far end of the meat bin as far from the fire as possible. _________________ http://kchawgskitchen.blogspot.com/

i was just thinking off doing a prime rib this Saturday, now I now for sure.
How long did you smoke it for and at what temp ? gave it a grill first ?
looks like a nice meal.
oops I forgot, my wife is pregnant !!!
okay that probably doesn`t sound the way i mean it.
I mean, no red meat for her, does that mean no red meat for me
or shall i make two prime ribs

Double J, why no red meat for the wife? through 2 pregnancies with 2 huge very healthy babies the only thing my wife gave up was seafood. it made her sick anyway so avoiding the mercury was easy.
she even had a beer or small glass of wine every few days on the stressful ones.
she did keep the meth to the weekends though.. |

Looks to me like you did a perfect job on that rib roast.. and served up simple as well, just the way I like it. After all, its all about the meat with a hunk like that.
