I make a couple different types of chili in my household - this one has beans and has a slightly sweet, smokey flavor. This is the chili I made for the Tailgate Throwdown. . . .

Double Barrel Chili

Ingredients:
2# ground chuck or sirloin
1.5# smoked beef brisket, cubed
1 large onion, chopped
¾ Cup each green and red bell peppers, chopped
3 med red chili peppers minced (trimmed & seeded but I keep the membrane for spice)
10 cloves garlic, minced
3, 15 oz cans crushed tomatoes
1 Beer – moderate bodied
1 large can Ortega green chilies, minced
1 can white beans, drained
2 cans pintos, drained
PLUS -- Items I add “by taste”:
Chili powders: Ancho and Chipotle (I typically use 3 Tbsps Ancho, 2 Tbsps Chipotle)
Srirachi sauce
Cumin
S&P to taste

Mesa flour to thicken (3 Tbsps mixed in 1/3 C cold water, then add to simmering chili)

Destructions: Brown up the ground beef and strain out. Caramelize ½ of the onions in bacon fat (or EVOO) – then add in the rest of the onions and cook until translucent. Add in both bell peppers and “stir fry” over H-heat for 1 minute. Add in the spicy red chilies and cook for 1 minute. Add garlic, cook for 30 seconds. Dump in the crushed tomatoes, beer, green chilies and the spices and cook for 15 minutes. Add in the beans, the browned ground beef, and the brisket and bring to a smimmer - cook at a low simmer for 1 hour. Add in the mesa flour to thicken up (this is optional but I like my chili a little thicker) - cook for another 15 minutes to develop the mesa.

Toppings: Cheddar and Jack cheese, sour cream, chopped onion, black olives, avocado slices, red chili peppers (julienned), cilantro. Or whatever floats your boat.

As is usual with soups and chilies, this is better if made the day before (two days is even better). . . .
